A gentle breeze carries a ball of tumbleweed across the deserted town. It's high noon, the agreed upon time and Big Jim whistles to himself, swinging his colt paterson revolver around his finger. "Come out, ya no good yella bellied coward!" He spits on the ground and steps on it with his boot.  "Come out if ya know what's good for ya!"

A crash is heard at Old Bessy's Saloon. The wooden oak doors swing open and an unknown person in a large coat with a hood covering their face, walks outside. "Take off tha coat and face me, ya gawd damn ugly boot! You couldna teach a hen to cluck! You as slow as molasses in January!" Big Jim spits as he shouts.

The unknown person suddenly flings their coat into the air and their face is clearly seen. A pair of deep brown eyes and head of crazy red hair, Maria del Carmen, a legendary Mexican outlaw. At her side, two golden .45 colt single action revolvers. "Ain't got no beef with you, Big Jim. If ya know what's best for ya, ya keep on walkin!"

"You ain't gat no beef with me!" Big Jim lets out a howl of laughter. "Ya know my tortillas are the best, yet say ya can do beta! For that, I want yaw head!" Big Jim as quick as lighting pulls the trigger and a bang is heard. Maria stands there unmoving as the bullet crashes into her chest. Strangely, she takes a step towards Jim. "Ya want more?!" Big Jim pulls the trigger multiple times and bullets fly at Maria. Strangely, she doesn't collapse, but takes another step towards him. "How..." Maria starts running and before Jim can even react, she smacks him in the head with one of her guns and he slams to the floor unconcious.

Maria lifts her poncho and, unbelievably, a tortilla is seen hanging over her shirt. The bullets have been amazingly stopped by this one single tortilla. She spits on Big Jim's face, "My tortillas will always be the best. WILD FANG!" She screams and a horse, black as midnight, gallops in. She swings herself onto the horse and gallops off into the distance.

Tortillas are just so good. We love a burrito with some guacamole and roasted chicken. Do yourselves a favour and give this recipe found at The Cafe Sucre Farine a try! Enjoy!

Tortillas

Servings
8

Prep Time:       00:45
Cook Time:      00:20

Main Ingredients

3 cups of all-purpose flour
1 tsp of salt
1 tsp of baking powder
1/3 cup of vegetable oil
1 cup of warm water

Preparation
  1. In a bowl, mix all of the ingredients together.
  2. Knead the ingredients together until it forms a smooth dough.
  3. Cover your bench with some flour and transfer the dough to this bench.
  4. Split dough into 8 balls. These balls will be your tortillas! Allow them to rest for 20 minutes.
  5. Place the first dough ball on some baking paper. Cover it with another piece of baking paper. With a rolling pin, flatten the ball so it's about 15-18cm in diameter. You can make less dough balls and make bigger tortilla if you want. Repeat this process for the remaining balls.
  6. Heat a pan over medium high heat. Put the first flattened circular dough onto the pan for about 1 minute. As per the original recipe, you will see little bubbles start to form on the top of the dough.
  7. Flip the tortilla. You should see small little golden spots on this side. If not, the heat is too low, so you should increase it slightly. Cook the other side for about 30 seconds. Transfer to a covered container to allow to cool. Repeat this for all the tortilla.
  8. Store them in zip lock bag and you are done!
