Garlic is a friend, a friend we couldn't live without, a friend that's always there for us, the kind of friend that can make any dull moment into something to remember. A friend that can turn prawns into garlic prawns, bread into garlic bread, mayonnaise into aioli. A magical friend that just with their presence can cheer us up in an instant. Whether it's just in the background showing its support, or blazing up the stage in all its glory, garlic knows just what to do. We have always loved aioli; it's been a staple to dip our chips in for years, and it always adds to a burger. So, it just seemed right when Adam suggested we make aioli one night. So off we went to the store, big grins on our faces. Not a care in the world. With garlic on our side, how could anything go wrong? This recipe would be a piece of cake. We skipped, we laughed, we sang. We picked up a bag of garlic from our local store and happily we returned home. Luxuriously, we unpacked all of our ingredients. We cut into the garlic and the unthinkable had happened. To our horror, all of the garlic had green, bitter cores. We smelled the garlic and, with great resolve and sadness, we gave our judgment. This garlic had turned. It had become too old and mutated! "Let's try the fresh fruit and vegetable market." Candice says. So again, off they went, this time journeying further. But what's an extra 30 minutes to make a perfect aioli? They skipped, they laughed, they sang. Surely, the fresh fruit and vegetable market wouldn't let us down. *Fast forward one hour* We cut into the garlic and.. "No... No... for the love of god, no! Not again, this can't be..." The core, green yet again. We had yet again purchased old, flavourless garlic. "You know what needs to be done, Candice." Adam says. Candice nods, a sadness in her eyes that cannot be expressed in sheer words. "Let's go." She replies. *Fast forward 3 hours* *Airport announcer* "Boarding is in 30 minutes. Please head to Gate 6" *Adam sighs* "It'll be worth it, Candice. I'm sure of it..." Candice nods, a sadness in her eyes that cannot be expressed in sheer words. *Fast-forward two days* They cut into the garlic and.... Perfection. Absolute, perfection!
